Pyaj ke Pakore
(Onion Pakora)

This is a very popular deep fried snack. I like to make pakoras for big parties, because it is easy to serve and everybody loves pakoras. In some parts of India pyaj ke pakoras are also known as bhajiya.
Ingredients
(serves 4)
For Pakoras :

Onions 2 big
- Besan (Gram Flour) 1 ½ cup
- Rice flour 2 tbsp (optional)
- Green chilies 3-4
- Chopped coriander leaves
2 tbsp
- Chaat masala 1 tsp
- Red chili powder ½ tsp
- Salt 1½ tsp or to taste
- Oil to deep fry

Method of preparation

Remove the stem, wash and finely chop the green chilies.

Peel off the onions, wash and cut onions into thin long slices (about 1 and half inches long pieces) - like juliennes.
- In a bowl take gram flour (besan), rice flour, salt, red chili powder, chaat masala, onion juliennes, chopped coriander and chopped green chilies. Mix well all the ingredients. Add a very little water at a time to get the perfect batter.

In a wok heat oil on medium heat. Take a table spoon full of batter and pour it onto the hot oil. Pour 7-8 pakoras in the same way. Deep fry the pakoras on medium to high heat. It takes about 8-9 minutes to get nice golden brown color.

Repeat the process with the remaining batter.
Serve hot pakore with coriander chutney and meethi chutney.
Some Tips/ Suggestions:
I like to add Rice flour in pakodas as a hint of rice flour makes pakoda crispier.
